Cat bites super hard due to being declawed, how to give him medicine?

MY FIANCE AND I DID NOT DECLAW MY CAT, HE CAME TO US THAT WAY!

I love my cat, Coffee, but he's super aggro due to being declawed. And I get that. I feel bad for him. When he's not feeling threatened he's super cuddly and chubby and just a good boy! But if he does feel threatened or scared? Holy fuck. The people who found him couldn't even get him out of their barn because he was so aggressive.

So, this presents a problem where my fiance and I can't give him meds like pills or eardrops because he will chomp the fuck down. He's so aggressive when he's upset that even our vets can't handle him.

Right now we have a problem where our other cats had ear mites problems. He's shaking his head like he might. But we can't look in his ear to see, and if he does...we don't know how to administer drops.

again, WE DID NOT DECLAW MY CAT.
