Is my new (to me) cat sick?

Hello r/Pets,

Preface: I have a vet appointment on Thursday but I am a little nervous and would love to hear from some more experienced pet owners in the meantime.

I just got a cat on Sunday, and since then she is having some gastrointestinal distress (very runny stool). Most recently, within the last hour or so, she seems extremely nervous and skiddish, running away frantically whenever I come into the room. She has been such a calm cat the last few days and when I first met her, it seems very out of character for her. As I am writing this, she seems to have gone back to normal. It was like a 1 hour bout of paranoia. I have a bit of a log below that I was planning to give to the vet. I would love to hear if anyone has any ideas about either the GI issues or the sudden bout of nervousness, I would greatly appreciate it.

Picked her up at 12pm, drove home 2hrs with no issues. Slept and explored car.

Ate when we got home.

Peed and pooped in litterbox. Poop very smelly and somewhat liquid.

Continued exploring apartment for the remainder of the evening.

Woke up 3-5 times over the night, sometimes using litterbox with same result as above.

Meows at most doors, mostly when left alone. Doesn't seem to want attention, but petting and holding distracts her.

Poop getting more pungent and less solid overnight, once in the morning. Gag inducing to be in the same room. This is when I called the vet

Fed her some canned pumpkin ~2 tbsp (puree, not filling) instead of kibble for the morning

Next poop unchanged, but big improvement in the following movement

Squirted a small (< 1mL) amount of very liquid and thin brown fluid when picked up (anal glands?)

Mixed kibble with pumpkin, started to eat it but did not finish. Ate maybe 1/2 cup kibble throughout the day, very little pumpkin past the earlier amount.

As mentioned, evening litterbox was much more solid, looked like a log instead of a puddle for first time. Smelled much more tolerable.

Slept well at night and for several hours during the day.

Another use of litterbox in the morning was solid, but with small (~2mL) amount of fluid next to it, similar to the fluid she squirted yesterday.

Used litterbox mid-morning but it was very liquid, similar to earlier. Smelled a little weaker but still foul, seemed slightly more yellow than previously.

Discharged a small amount of fluid like yesterday, this time after crawling voluntarily into my lap.

Excited for kibble but she lost interest when pumpkin was mixed. Grazed on it through the day, eating ~2.5 tbsp pumpkin total over the day. Suddenly became more interested around 5. Ate 1/2-2/3cups kibble over the day.

Another litter box visit around in the evening with 2 puddles, like the mid morning visit in all other aspects.

Seems suddenly more alert and skiddish.

A few bits of supplemental information for those interested enough to make it this far. She is a long-haired cat and has some issues with her feces sticking to her backside. She is about a year and a half old. She was eating raw, but there is no scientific evidence I can find for it really being better, so I have switched her to normal food. I know that this can cause some stomach upset, but I could tell from the aforementionedfur on her bum that she was having issues since before I picked her up.
