Travelling - Ferry & Long Distance

So, I'm travelling from Devonport, Tasmania, to Melbourne via ferry, and then driving from Melbourne to Perth in my car. I'm bringing along my almost 2 year old greyhound x lab with me as well as my 3-4 year old cat (don't know exact age, adopted as a stray). Both are desexed, vaccinated, microchipped, monthly dewormed/flea treatment, have collars with name tags, everything. They love human contact, I'm not worried about them running off, and they get along with each other.

They both enjoy car rides, but I worry about the ferry as well as taking them on a 5-6 day car trip. My dog has separation anxiety (only when left alone without other dogs or humans). Whenever I have to leave her alone, she stays in her crate and I give her calming treats (ingredients: chamomile, taurine, ginger, winthania) which is also cat-friendly.

I plan to sleep in my car (back seats fold down) with both my dog and my cat having free roam with a kitty litter tray available just in case. Cat is very clean so I'm not worried about accidents. I won't have enough space during drives to have my dog in her crate, but she has a car harness that attaches to the seat belt in the front, so I'm not worried.

Bringing with me:

  • Leashes/harnesses for both
  • Dog food & cat food (dry)
  • Calming solutions/treats
  • Kitty litter
  • Doggy bags
  • 3 litre bottle of water for travel (Refill during stops)
  • Collapsible water bowl
  • Toys & treats for entertainment

Additionally: Cat does not like travelling in enclosed spaces. She meows and cries and hates it. She has a harness and is leash-trained and I generally have her attached securely to the seatbelt. She enjoys car rides outside carriers within the vehicle. So either;
A) Keep her inside a carrier and fill a shoe box with plastic and kitty litter, but she will meow and be distressed throughout the travel, or;
B) Keep her in her harness and leash with access to a kitty litter tray in the back during travel and just hope I don't get pulled over.

I guess my main questions are...
1) A or B?
2) What kind of sea sickness treatments can I give to both my pets?
3) What additional items should I bring with me?
4) Anything else I should be concerned about or worried about?
5) Travelling with pets tips are greatly appreciated!
