cat adoption regret, is there hope?

when we first went to the shelter we met this 8 month old cat that was incredibly sweet, she got into our lap and purred, she was so sweet and we instantly fell in love. now a month into having her in our home she's not like this anymore. we play with her frequently and keep her box clean and feed her well, she has scratching posts and free reign of the house with plenty of high spots to go and walks around confidently. we think we're doing everything right, but she's not the cat we thought we were adopting.

she will be cuddly for a minute at most and then just suddenly gets up and jumps off the bed. her tolerance for petting is low and her temper is quick, resulting in us getting scratched or feeling rejected when she runs off after a few moments of loveiness. were confused and sad, as we both wanted a very affectionate cat like the ones we had before that we've now lost, and when we met her she gave us no reason to think she wouldn't be like this.

we dont really know what to do, my GF was just scratched pretty badly and feels really disheartened by this. we've only had her a month and I know she was in the shelter for a while so I know she's probably a bit traumatized, but can someone with a lot of shelter cat experience tell us if this is something she'll grow out of with time and patience?

we love her and want this to work out since we made the commitment to take care of her but she feels less like a family member and more like a snappy roommate you have to walk on eggshells around. and considering how she acted when we first met her it's such a shock to us. we have no intention of returning her but we just want some hope that things will turn around.
