Depressed over shy cat

I adopted a cat from an animal shelter about 6 weeks ago. I named her Sango. She came from a hoarder house and had just recovered from a URI. She’s been hiding in our half bath in an enclosed cat bed. She would hide behind the toilet and after reading/watching advice about shy cats, you need to give cats “safe hiding spots.” As a compromise, I stuffed pillows behind the toilet and put her bed on the side of the toilet (her litter box is on the other side). Her food station is setup in this room. She only comes out for treats and food and any sudden noises scare her, especially the sound of my husband’s foot steps. She will immediately retreat to her bed. Occasionally, she will come out of her bed with her tail pointed up and twitching and rubbing my hand with her cheek. She seems only do this in the morning after I feed her. So I guess there’s that.

Last week I switched her cat bed with a duplicate (she was sneezing and I wanted to spot clean it, it looked dirty, covered in tons of furs and litter sand from her paws). She freaked and hid behind our dishwasher in the kitchen. We pulled her out because it is an extremely small crawl space and I had fears she wouldn’t get out. I feel like this set her back again. She’s sometimes friendly, but again, not so often.

I’m been depressed about this, because she’s just not warming up as much to my husband and I would like. Is this ever going to change? I noticed that she gets extremely antsy as we go to bed and can see on our web cams that she does leave the room only at night and use the cat trees and litter box in the other rooms. There was only 1 time she was out in the kitchen in the morning in the duplicate bed we setup in a chair. I’m not sure if she fell asleep and didn’t realize we were up. Once we went downstairs, she snuck army style back to the half bath. This was a few days after the dishwasher incident.

Sorry, this is more a vent than anything. My husband and I have been stuck working from home because of COVID-19 and this cat is my main focus. It’s just making me so sad that she doesn’t seem to like us.
