What should I feed my kitten?

I have an 8 month old Persian(doll faced, not flat-nosed) male kitten. He is a total foodie and isn’t very picky like most cats are and doesn’t even get an upset tummy while switching foods.

This is his diet ever since we brought him home.

Breakfast(6-7am)- one boiled egg Lunch(2pm)- handful(I have small hands so not a lot) of dry food(arden grange or Royal canin) Dinner(9-9:30pm)- wet food(85gms) Of course he gets a lil bit of treats now and then

We would also feed him boiled chicken or fish or prawn once or twice a week for lunch or dinner. Everything would be deboned and shredded for his convenience.

He gained weight healthily and at one point I thought he might become overweight. As time went by, I think he lost some weight cuz maybe he grew up and the food he is being fed isn’t enough for him? Idk. Also he started asking for food often now and I myself feel like one boiled egg is too less for him I have no idea. As his side increases, everything in his bowl looks so little.

He would always ask for me prior to his feeding time if he gets too hungry and nowadays he’s been doing that too often. He’s been asking me for food an hour before his feeding time which has got me thinking that maybe he isn’t being fed enough.

What should I feed him now? And also please specify the quantity. I can’t take him to the vet cuz of well quarantine and even if I did I don’t think the vet would prescribe a plan for him cuz the last time I asked he said what I was feeding him was good enough. Google doesn’t detailed answers so here I am asking to people who have considerable experience with cats.
