Help with a serious bite

Hello, I recently adopted a golden lab who is 7 y/o. His name is Jay and he is very sweet and cuddly also very big (~100 lbs but dropping with all the exercise he is getting now) He was put up for adoption because his owner's were old and were moving into a retirement home. They raised him since he was a puppy and said he was always very nice. They seem like good people.

In the last 3 weeks he has adapted to the new house and is very social. However, about 4 hours ago my flatmates had two others over to watch a movie. Jay has met both of these people before and knows them quite extensively. Jay got off the couch and was still standing when one of the two came over to hug him. Jay enjoys hugs and has been hugged a lot by this individual.

It is important to note that I was not here at the time (I am the authority). He bit her hard. One of my flatmates said that he dragged this individual by the hair and ear for a few seconds before letting go. This person went to the washroom and was bleeding profusely. They passed out twice (they typically do this with needles or similar puncture wounds). We called an ambulance and they were taken to the hospital. They are missing a chunk of their ear. (Small, like a hole on the edge of the ear)

I am very worried, not only have I not had to deal with this before, I don't know anyone who has. I do not know what pushed Jay to this but to us it is not obvious that any boundaries were violated and he enjoys the attention given to him. Stuff like this can apparently lead to the animal being euthanized and no one wants that :(.

So I've come here, I disciplined him by separating him when I was informed of what happened. Then I brought him to the blood that was now on my floor to have his nose rubbed in it while giving him firm smacks on the nose while saying no and bad dog. He has been in his crate since.

How do I proceed? Both with discipline and with behaviour. I'm thinking I'll see a behaviour expert. I just don't understand how a dog with no history or provocation can do something like this. All advice is welcome thank you.
