What are shelter volunteers looking for when potential adopters do a meet and greet with a dog?

My boyfriend and I are going through the adoption process with one of our local shelters. We got the green light to meet one of their dogs and went this past Saturday. The boy we are looking at is a four year old shepherd. I thought for sure it was game over when he came out growling and barking at us (he eventually calmed down), but at the end, the shelter volunteer said we did extremely well with him, and wanted to know when we could bring the kids to meet him. They seem to be leaning very hard towards us, and this particular dog had a LOT of interest. I'm just wondering what volunteers are looking for to determine whether a dog is a good match for someone?
