My cat doesn’t like meat

My mom let me have a kitten when I was 11 and they free fed them mostly dry food, we had multiple cats. My cat eventually got old and developed kidney problems most likely a result of her weight and diet. I didn’t know at the time that dry cat food was harmful and when she lost weight I thought she was getting better but she was actually sick.

So I didn’t want another cat but I ended up fostering a cat that the owners didn’t pick up so now I have a cat again. I used to feed her wet food every morning and give her a set amount of dry food for the day. After a while she stopped eating the wet food. I tried to give her pieces of my tuna, eggs, or chicken when I was cooking. One time I dropped a piece of bread and she ate it. She likes kibble and apparently bread how do I make sure she’s getting enough water in her diet? And how do I know if she’s overweight or not? She’s fixed and 2 or 3 years old now.
