Preparing to move my cat internationally with me, what is the process like?

I'm moving from LA to Seoul, Korea later this year. My main concerns are:

1) What are the necessary paperwork and prep that needs to get done prior to the move?

2) How can I make the flight comfortable with her? I am planning on having her with me in-cabin. But the flight is 13 hours plus customs, additional time for COVID restrictions if any, and travel time to my Airbnb (possibly 1 hr extra). That's 16+ hrs minimum that she'll be inside her carrier. Should I do a weekend layover in Alaska/Canada/Hawaii to break it up?

She is almost 8 yrs old but in good health since our last vet appt. I was thinking of teaching her how to walk outdoors so that she's more acclimated to change. She's been a housecat all her life (but has experience on long distance road trips since my family lives apart). She hates travel but usually stops complaining after the first hour of driving.

I'm afraid that she'll die in transit, people have told me how stressful flying is for cats - not being able to use the litter box, eat or drink plus the sounds around us. People have recommended that I leave her with my family but I'll be gone for at least 2-3 years.
