Help! Cat keeps stepping in poo

About three months ago I adopted an 8yr old tabby, who is just the sweetest, happiest boy.

However, I’ve dubbed him “Poopy Paws” because he keeps stepping in his poo in the litter box. He has two boxes - a regular litter pan with high sides and another that has an entrance from the top - and it’s happened a handful of times with both.

I don’t know how to prevent it from happening, and it seems to be happening more and more. I’ve tried a few different litter mats, and am going to try a larger box as well. But when I’ve watched him, it seems like he is just clumsy/ not careful and steps right in it as he turns and tries to cover it. He’s a shorthaired cat, but the hair between his toes is longer than any other cat i’ve ever had, so idk if that has something to do with it?

Then he just leaves the box and tracks it all over the house. It’s mainly his back feet, and he gets super upset when I try to clean him off with a wet paper towel.

Any other suggestions for what I could try to stop poopy paws? It’s starting to drive me crazy!!
