Homemade treat recipes for my cat

TL;DR - My cat doesn't like the food she has to eat, what relatively healthy treats for cats can be made at home?

Around Christmas time my cat developed problems with bladder crystals and has had to be put on a special urinary diet recommended by our vet to keep it under control. She does eat this, but she makes it very clear that she does not want to, and would very much rather go back to her old food. In response to this we started giving her small amounts of supermarket wet food in the mornings - not enough that she wouldn't get hungry and eat her urinary food later in the day, but enough to stop her sadly crying in the morning.

This worked great for a while, but she developed a problem with itchy skin and pulling out her fur, which according to our vet is likely caused by an allergic reaction to the wet food she was eating. The vet's recommended alternatives of plain chicken or white fish have been completely rejected, and I am reluctant to start experimenting with different supermarket wet foods again.

So reddit, what delicious but hypoallergenic treats can I make for my cat?
