Cat feeding question

So, I've got a question about my cat's feeding. I have three cats, let's call them fat cat, furry cat, and skinny cat. Ever since my family got our first cat a few years ago, we have had a water and food dispenser that always stays full, so the cats can eat and drink whenever they want. Fat cat, as the name would suggest, has grown pretty obese. Furry cat is a normal weight, if a little chubby, but it's hard to tell, b/c she's long haired. Skinny cat is very thin, probably underweight.

I want to take away their refilling food bowl and put them on an eating schedule, but there are a few things that worry me.

1) I'm worried the cats won't react well to a sudden change in feeding. 2) I'm worried my skinny cat may not eat enough and grow even skinnier. 3) Fat cat is known to bully the other two into giving him their treats and/or moving away from the food bowl so he can eat, and I'm worried he'll steal their food.

I've also heard many conflicting things about how to feed cats. Two times a day, four times a day. Wet food, dry food. Snack times, no snack times. So any advise on what I should do about my cat's eating would be appreciated. I'm worried if I don't change the way they eat fat cat and fluffy cat may get fatter and die younger, or that skinny cat won't get enough food and may get sick.
