I need help switching to scheduled feeding for my cats

So I am the caretaker for three cats (bear, ellies, and bug) for the foreseeable future, and one of them is borderline overweight. So I'm attempting to switch to a scheduled feeding schedule instead of letting them eat whenever and however much they want.

The borderline overweight one (bear) is doing great with the scheduled feeding, but the other two (bug and ellies) aren't.

The first one having issues is ellies, she is barely eating when I offer it and it's been three days. Since she is extremely skittish, I tried leaving her food on a table that only she uses (it's one of her safe spots) and she never touches it. I've given her treats with her food, and she only eats one or two pieces and goes off to do her own thing. I don't know how to entice her to eat or if I should switch back to free-feeding since this is probably stressing her out.

The other one having issues is bug. I have never seen her eat dry/wet cat food her whole life, even though I'm suspecting she has since she isn't underweight. We've tried getting her to eat it since she was a baby and she refuses to eat it. She only eats this refrigerated kibble that's $5/pound and it's rarely in stock or human food so I'm attempting to switch her to eating something else. The only food I give her, including the kibble, I treat as treats since she had free access to normal cat food her whole life. but now that I'm taking away the main feeder, I need to find a reliable food source for her and I don't know what to do. I've tried pretty much every wet cat food my local Walmart has and she just turns her nose up at it. Also, even if she is eating normal cat food, she will not do that in front of me and she won't eat it even if I try sectioning her off from any distractions. So I'm just stuck on what to do for her since she needs to eat and I can't guarantee she will have access to that kibble.

tl;dr I just need help getting a cat to eat and switching another cat to another type of food

This has been really stressing me out lately so thanks for any help :)
