What should I do after cat sitting for several years?

Hello all, just looking for a little advice.

About three years ago my (now ex) girlfriend and I adopted a cat, and our neighbour adopted two from the same litter. After some time the neighbour was getting evicted, and asked us to watch the cats while they find a pet friendly place. That happened almost two years ago now.

Me and the ex broke up a few months ago, so for a good chunk of time it's just been me and the kitties. Ex says when she finds a place she wants to take our cat, and I said that's no problem. However I asked the neighbour if, seeing as I've been watching and caring and paying for these cats for multiple years, if I could keep one of her two cats so I'm not all alone. She said no.

So the way I look at it I have two options:

• Keep the cat anyway seeing as I'm pretty sure by law they're my cats by now anyways. Benefit is I get to keep one of my kitties, downside is the neighbour will vindictively lash out at me, also separating them may cause a bit of anxiety (although they are not very close).

• Give back both cats and adopt a new one. Benefit is the neighbour doesn't lash out and I still have a kitty, downside is I don't know if this kitty will be as loving as my current cats.

I'm just looking for some general opinions on what people would do in this instance. Any and all advice is gladly welcomed!
