New kitten having adjustment issues

I got Henry a few months ago, and she seems to do okay, but she has exhibited some odd behavior.

A few times, she has pooped outside the litter box. Once was right in front of the box opening, while I was right there. Another time was right next to the litter box, on the matting I have under the box. And this morning she pooped on a shelf in the room without the box. Last week, I'm almost positive it was her that pissed in my bed. seemingly more than once (the mattress cover looked like it had two pee spots right next to each other). She's also TERRIBLE at covering her poop. I don't even think she tries. My other cat is wonderful a poop covering, sometimes spending 10 minutes covering his poop, so maybe I'm just spoiled.

Whenever it is just me at the house, Henry is out and about, climbing the curtains and screen door, and knocking stuff off the shelves.. normal cat stuff. She gets along great with the dogs and older cat. However, when my husband is around on the weekends (LDR), she is nowhere to be seen. He's been at the house for about a week now as he's on leave, and she's still barely coming out. Anytime my husband tries to call her over, or pet her, or anything, she hisses at him, and then goes back to hiding under the couch.

I'm kind of at a loss here on how to get her more comfortable around my husband, or how to get her to use her litter box. Does anyone have an advice or insight?
