Cat bites only me when he wants to play/be petted. Advice?

I live in a moderately sized apartment with my girlfriend and another roommate. My girlfriend and I adopted a cat (Jon Jon) this summer, he is now around a year and a half old and this issue only started within the last two months. We have a play schedule where my gf will play with him for at least half an hour in the morning, and either her or I will play with him at least half an hour in the evening, play sessions can last up to an hour and a half if we have time. Jon Jon also has a ripple rug, a cat tower, a shelf, plenty of vertical space, two automatic toys, a few different scratchers, and plenty of loose small toys like those little jingle balls available at all times. He has no other behavioral issues. It may also be worth mentioning that I work part time and do school full time, gf goes to school part time and works part time with less hours so she is around more during the day.

When he wants attention or decides it's playtime, he attacks me. Only me, not my gf or roommate. He will straight up walk up to me and swat at or bite me with no previous interaction. We read that when a cat bites you should redirect to something he can bite (we use a dangle toy) but I'm afraid that we've just reinforced that if he bites me, he gets more playtime. I do make loud "ow" noises and move him away from me whenever he does this, but he just walks back and continues.

I don't want to punish him for wanting to play, but it's become difficult to focus on homework or other projects at home because he will attack me if he gets bored. I need advice on how to get this behavior to stop.
