Roommate's dog keeps biting me

So this has been going on since the start of the month, an accident occurred where the dog ended up snapping my kitten's neck and killing her. I could forgive that since it was an accident and the dog in question is a bit.. well, stupid, his owner freely admits that. But twice since then, completely unprovoked and without warning, the dog has suddenly lunged at me and bit my hand. The weirdest thing about it is that the dog isn't openly hostile to any of us in the house! He likes to be around us, and is a real sweetheart most of the time. This most recent bite happened last night at the time of writing. I had spent all day watching the big lug while both my roommates were at work and we were just fine together, scritches, going outside together, some playtime, but not even an hour after my roommates got home, he was chilling with his owner and me in the living room, I offered my hand to let him sniff (Which I had been doing all day before doing anything else, letting him know that I was here before doing anything so I didn't startle him) and he immediately lunged and bit. Roommate can't give him up because he has nowhere to go and I don't want my friend to have to move away from us just because his dog won't behave. Does anybody have any input on this?
