Input about my Renal kitty?

So my kitty (Remy) started losing weight this summer ..July/August is when we started to notice he looked a little bit thinner but was otherwise acting normal. He is only 8 years old and has been pretty healthy throughout his life. He started at about 13.5 pounds and we just figured he was getting a little older and maybe didn't have as much of an appetite.. Anyway,, we monitored him at home for a while until he completely stopped eating his dry cat food in October. We took him into the vet and they drew blood and did a urine test. He was about 10 pounds at this time. Sadly, they found him to be in stage 4 kidney disease and he had a UTI. The doctor prescribed us antibiotics to take for two weeks. At this time Remys Creatinine was like 7.7 and SDMA was 35. We repeated the labs and urine after the course of antibiotics to see how the kidney function was doing and to make sure the infection was cleared. The creatinine when we went back was down to 5.6 and SDMA 28. The doc isn't sure if the kidney disease was a chronic thing that Remy had for many years or if the infection is what caused the kidney failure. The doc brought up a kidney diet to us as a possible option but since he is such a picky eater and I've tried to get him to eat other brands in the past with no luck we (the vet and I) decided to just stick with what he likes for now and reevaluate his kidney function in about 6 months. The vet said it might get even better in that time and as long as he is eating and drinking we don't need to do anything else. I just want to make sure I am doing what I can for him. He is eating and drinks ALOT of water but you can hear that his mouth is dry. He's still peeing and pooping normally. He has days where he is more alert and than sleepy days as well. He's still cleaning himself. His breath is so smelly though!

Any thoughts? Things I should watch out for? Signs of worsening kidney disease? The vet didn't give us an estimate on how long Remy has (he said the longest he's seen a stage 4 cat live is 9 years from time of dx!) But what is average I wonder??
