Cat gets bitey while I'm away - How to go on vacation?

My cat can be kind of bitey. When I'm around, the only time my cat bites is when he plays too hard with your arm (because he was abandoned by his mother too early, and then I raised him poorly), but even though he doesn't bite full force, being a huge Norwegian Forest Cat, he does sometimes break the skin. As long as I play with him regularly though, it doesn't happen.

However, if I'm away for more than a few days and ask someone to come check on him, he can get more...I don't know if aggressive is the word.

From what both people this has happened to over the years told me, the minute they came in the house he would run to them and start demanding attention. For all the constant meowing for food he normally does, he would ignore the food they gave him and stick to their leg. If they tried to play with him, he would ignore the playing and stick to their leg. As soon as they started petting him, he would melt.

This would be totally fine, except that for some reason, which I neither understand nor know exactly what brings it on, shortly after, he would suddenly and without any obvious warning at all (maybe obvious to me, who knows him, or to people very familiar with cat behavior, but apparently not to most people) spring up, grab onto their arm, and sink his teeth in hard enough that both of them went to the doctor for antibiotics.

The second person this happened to I even warned, "My cat bites hard if you start petting him while I'm away, so just feed him and go", but he's so insistent on getting attention that they felt compelled to pet him.

Once, I thought, might have been a fluke, or something the person did but didn't want to admit to. But twice is definitely a pattern, and I'm not longer comfortable at all having anyone, even people who he knows very well and are at my house often, come in and check on him while I'm gone.

Usually this isn't a problem. A cat can do a week alone just fine with enough food and water. But in the next month or so, I'll be going on a trip that might be two weeks long, and next year I hope to spend at least a couple weeks in Europe on vacation.

So the question is, what do I do? I'd like to leave him home where he's comfortable, but I know that might not be possible. If I have him boarded, will they accept him if he's bitten people before? What options do I have?
