Advice for behavioral issues and health problems with previously hoarded cat

I've recently adopted a 5 1/2-year old girl who had been in and out of the shelter and foster homes for the past year and a half. She previously was rescued from a hoarding situation, but has adjusted wonderfully! She's very social and affectionate. She has chronic rhinitis due to having a long-term sinus infection prior to being rescued, so she is a constant snorter when she's awake and it doesn't bother her one bit. My boyfriend and I think it's kind of charming in a way. She will be on medication for the rest of her life, or there may be a surgery available (similar to one done one squish-faced pets to help their breathing). However, I think as a result of the infections she's also lost her sense of smell, which makes treat-training so far a bust.

She also has a habit of scratching at the wall next to her food and trying to cover it. Pretty sure it's a remnant from having to compete with many other animals.

Any advice for taming the scratching/attempts to cover her food and advice for a cat lacking a sense of smell?
