When looking to adopt an animal, how do you know you've found "the one"?

I live alone in a 1-bedroom apartment and have been considering adopting a cat or two for a while now. I grew up with 2 cats who lived to be 16 and 17, and there are times I really miss having a furry friend to hang out with.

I've been keeping an eye on our local shelter's website like a hawk, and I have visited the cats there a handful of times in the last 2-3 weeks. There was one cat there who caught my eye who I visited 3 times, most recently yesterday. She was a great match for what I was looking for in terms of age, looks, personality, etc. I was planning on adopting her this weekend...until she got adopted today. Our shelter has a no holds/deposits policy, so it's a first come, first serve kind of thing.

Adopters at our shelter do have to spend at least 20 minutes with the animal they're considering, but just 20 minutes seems like such a short amount of time to try and get to know an animal! I'm the kind of person who likes to explore all of my options and really think on decisions, especially big ones like deciding to adopt a living creature for the rest of their life. But now, I'm afraid that the next cat I consider will get "snatched up" again if I don't act fast and let myself have that time to think. But on the other hand, I'm wondering - if I have to think about it, is it really the perfect pet for me?

Can anyone tell me about their adoption experiences? Once you find "the one", do you just know then and there, like a movie? Or is it more of a "well, let's just hope this is great long term" kind of a thing? Hopefully my question makes sense. I'm pretty upset I didn't act faster in adopting the cat I had my eye + heart set on, but I keep trying to reassure myself that that special cat(s) and I will meet when we're meant to.
