Cat pee problem

Hello everyone! I am at my wits end and need your help. We have two cats adopted a year ago, Maggie and Dot. They are female, 4 years old and sisters, who were rescued from a neglected home (that’s all I know about their past). Everything was fine and dandy and both cats peed outside until about 2 months. I’m guessing something spooked Maggie in the garden as she doesn’t like to go out anymore and started peeing on the kitchen worktop and in particular on the hob. Obviously this is disgusting. I feel like I’ve done everything possible. We now have 3 litter trays (2 uncovered, 1 covered) in different rooms, all get cleaned regularly. I’ve put tinfoil on the kitchen counters which deterred her for a few weeks until she just started peeing on top of the tin foil now. Everytime the counter is cleaned with bio washing powder and cat enzyme cleaner. Ive tried using citrus disinfectant to clean the worktops as I read they don’t like the smell. She always poos in the litter tray, just not pees. She always does this over night, I’ve only caught her in the act once. I really don’t know what to do. We are getting a new kitchen put in at the end of October and I really want this problem solved before then. I can’t restrict access to the kitchen as their cat flap is there. Please tell me there is another solution I haven’t thought of? I can’t really put a litter tray on the kitchen stove... but maybe I will have to start putting it there overnight
