My elderly indoor cat showed life for the first time

I got my cat from the shelter a few years ago. They found her on the street so they could only estimate her age, and she was already declawed too. She's probably around 15 years old now, and she's "fine": she still eats and grooms herself, can walk/run/jump, and I take her to the vet regularly.

My concern has been that my cat is bored. Most of the day she just sits in my room staring at nothing. She has absolutely no interest in any toys: whatever I try wiggling in front of her, her pupils don't even move. I heard declawed cats still like scratching posts and I got her a nice one, but she hasn't touched it once. She has no interest in cat nip. And while she's an indoor cat, I've tried letting her go outside, but she's very timid (probably a personality change caused by her declawing). She'll just nibble at the grass closest to my door until she hears a loud noise then quickly run back into the house and under my bed.

The point of this post: today, a spider happened to crawl into my room, and I saw my cat paw at it until she caught it and ate it! It's like the first time I've ever seen her do anything besides eat, poop, meow, groom, or try to hide under my bed. So here's my question: should I buy a bunch of live crickets or something and occasionally let a few out just for my cat to hunt? Is that a thing? Is it fucked up? Am I worried about nothing with regards to my cat being "bored"?
