Cats with plants, how to stop them from biting plants

So I have a lot of plants that I know some are poisonous to cats. My 8.5 week old kitten just started noticing them and wanting to explore them/ bite them. Although I have a bunch on shelves, he will definitely get to a point where he can jump up regardless of where i put them. All that to say, what can I do to stop this, I’m a bit wary of using a spray bottle with water as I have never done that before to deter him from anything, but I would never let him get sick. I have tried apple cider vinegar on cords, but he likes the smell/ taste of it, so I can’t use that. Worst case scenario I give away the plants, but i would prefer not too. All advise welcome!
