Newly adopted 1-year old cat chewing on/through cables

TL;DR: young cat biting through cables, vapor rub deters her but she finds other cables without it that she bites.

I’m looking for advice on my freshly adopted kitty (1-year old American shorthair, living with us for about 2 weeks. The only issue she’s having is somewhat of a bully housemate and the cable biting which I believe is unrelated. She doesn’t seem scared of her housemate and regularly seeks him out. She is very friendly with him but he will sometimes get into aggressive playing(?) where he will stalk or chase her and jump over her. She will either swat him away or hiss at him. I’ll then separate them to give time to cool off. She has a few toys with more on the way, but I’m wondering if I should avoid toys with strings due to possibly encouraging her to seek out items like a string or cable? Any other advice for deterring her humanely and permanently? I currently put some vapor rub on exposed cables and put them near her and she hates the smell and avoids it, but then she just looks for ones that don’t have any and chews that instead. A vet visit isn’t a good option as I live in a rural area and they do not take appointments so I would be waiting for several hours with no guarantee of help
