How do I handle my food-obsessed cat?

I adopted a 1-yr old cat a month back and I've noticed that she is highly driven by food. She often jumps on counters trying to scavenge for food (maybe a habit from her street cat days) and scratches the scratching post/furniture to get my attention. She isn't aggressive but lately she has also started biting my legs when she's agitated from me not giving her food. I'm trying to stick to a strict schedule and am trying not to feed her too much because she's starting to become overweight. I set the automatic feeder to feed her at 6am in the morning and I hand feed her at 6pm at night.

I play with her too throughout the day until she gets bored so I don't think it's pent up energy that's causing this issue.

Will the biting/scratching eventually go away if I stick to a schedule or do I need to start spritzing her with water? I've only tried a few times which makes her more agitated and bitey.

The shelter is giving me a few more weeks to see if I can handle her behavioural issues but I'm worried this will be a long term thing, especially as a first time cat owner.
