6 month old kitten extremely fearful, any tips on coaxing her out of hiding?

I recently got my kitten about a week ago and she has been having problems being around people in general. She mostly stays under my bed and only comes out when i’m gone or at night when she thinks im asleep. If someone gets too close to her she’ll begin to hiss. Apparently in her last home (in which she spent 2 months at) the owners were never able to get near her, and she spent most of her time around their other cats.

How can help her be more comfortable around people? I’ve seen tips on only leaving food out while you are around so they associate food with you but i’m scared she might not eat at all if i do something like this. I’ve tried looking up other tips for socializing her, but i can’t even do much of the advice as alot of it involves getting near the cat/being able to interact with her which is a stage i haven’t even reached yet.
