Getting a pet with potential allergies?

I've had fluctuating allergies to pets throughout the years. Was around lots of cats and dogs when I was younger, no problems. Once my family cat passed away, I seemed to gradually develop an allergy to both cats and dogs. Would get sneezy and stuffed up whenever I went to my grandparents houses, who had cats and/or dogs. For the past few years, I have been around little to no pets. Only cats I've been around have been at a friends house, and I have no issues with them the couple of hours I'm there for at a time.

Currently I live alone in a condo, allowed cats but not dogs. I would love to get a pet. I went and got allergy tested (pin prick). Had no allergy to dogs, and a +1 allergy to cats. The doctor explained that this is just a snapshot in time, and that allergies fluctuate over time, which could explain why its changed for me over the years.

So I guess my question is, how do I deal with this? Are there any particular cats that tend to be "low allergy"? Is it common to just slowly overcome a pet allergy if exposed to the animal for long enough? If I were to get one from my local humane society, is it possible to return an adoption if you just can't handle it (absolutely last option, would hurt a ton to have to do this).
