New Kitten, love her but feel like I got the old bait and switch

I met this adorable kitten in the shelter and immediately fell in love with her. She was nice, cuddly and playful. I played with her with some toys at the shelter and I ended up adopting her. They put her in a crate and she was even really quiet and good there too. She ate one or two of the treats too that I gave her.

Well that was at the shelter...

Now, i have had a totally, opposite experience. Most cats will hide when you first come home. Not mine, she came out of the crate almost immediately and didn't hide at all. I was actually surprised. Then she wanted attention, which is fine, however, its been non stop..almost to the point where its like a workday. I get home at 5 and its from like 5 pm to 12 am..she just wants to be ON ME. Not beside me me or near me, but on top of me. I don't get it. Ive tried moving her, and redirection and nothing works. I thought she was cold, so I put the heater on, and that did not work. I have literally sat in my living room for 6+ hours, having to cuddle her for several days now. She refuses to eat alot. I can open up a can of wet cat food..and she will eat a little bit of it and then stop. She REFUSES hard food..despite being given a bag of free food and I was told that is what she was on. She will not eat it at all, not even mixing it with the wet food.

She also refuses to play, which is weird because she was playing at the shelter. I went out and got several toys, even dipped one in catnip and nothing. The biggest thing was today though. I had back surgery a few years ago and I am still sensitive about being touched back there. Some days I have good back days and bad back days. Well she was on my couch which was fine and i was working and she jumped from the couch and landed and slid on my back, scratching the SHIT out of me. It hurt. I honestly didn't do anything to deserve that. I have a foldable chair, so I have no idea what she was thinking as she cannot fit on it while I am sitting in it. So its like, I don't understand. I adopted this fun loving, nice, and amazing kitten. And what I feel like I am getting is a neurotic, clingy kitty.

Also, she acts like a maniac in her crate. OMG, you would think that I was torturing her. She will howl at the top of her lungs, try to push on the door and will twist and contort while trying to get it open. I honestly thought she was going to bust out a few times already. She didn't act like this when I got her from the shelter. So what happened to the cute kitty that I adopted? What can I do? I am at a total loss here.
