Shelter dog refuses to poop anywhere but in crate

We adopted a 5-month Chow/Lab mix two weeks ago. She was born in a shelter and was only transferred from a kill to no kill shelter. When we first got her, she was afraid of us, but warmed up quickly. She’s never been in a house before, but seems to be adjusting well. Our only problem is that we cannot get her to poop anywhere but in her crate. The crate is the perfect size for her. We had bedding in it, but have removed it because she kept soiling it. We have tried feeding her in the crate, but it makes no difference. Also, she will only poop at night usually only once a day and typically eats it. We were able to get her to pee on puppy pads in a couple of days using a housebreaking attractant spray. We cannot walk her outside yet since we have about two feet of snow on the ground and she is afraid of it. When we brought her home she had to be carried to and from the car because she just froze and wouldn’t walk at all. We’ve been waiting for warmer weather so she doesn’t get loose and freeze to death. Does anyone have any ideas? She seems to be a very intelligent dog and picks up things quickly, but she has held her poop for 48 hours at a time already because she won’t do it anywhere else.
