Worried about my cat after spaying

My 5 month old cat, Otter, got spayed yesterday. She was very quiet on the 20-minute car ride home, but as soon as we got back, she was immediately running, jumping, and playing. She was also licking her stitches quite a lot. We tried to put an e-collar on her, but she absolutely hated it and wriggled out of it no matter how tight it was. She ate a little bit of wet food but wasn't drinking anything - instead, she stood in the water bowl and flung water all around with her front paws until it was completely empty (something she's never done before). I called the vet about this and they said she's probably still loopy from the anesthetic and acting weird.

It's now day 2. I don't think she's slept at all. She was very active all night. This is very unusual for her, as she always sleeps most of the night and most of the day (she's usually active in the morning and evening). There was a TINY bit of poop and no pee in her litter box when I cleaned it this morning. She's currently locked in my (small) bedroom with her litter box, food, and water. I spent most of the night with her but eventually around 3 am when she was still rampaging around decided to move to the futon in the living room to see if that would encourage her to sleep. I don't think she did, I was hearing noises from the bedroom.

This morning, she drank a lot of water (almost a full bowl, not the whole thing). I know drinking a lot of water can be a sign of infection but I'm not OVERLY worried about that because I figure she didn't drink at all yesterday and must be thirsty (should I be worried??) - she also ate a bit of wet food and I gave her a half tablet of gabapentin as instructed by the vet. She's still jumping and playing, showing zero signs of sleepiness. I haven't been able to get a good look at her incision without picking her up but from the quick glances I've caught it looks alright. She's not licking it so much this morning, hardly at all.

One last thing, she keeps going into her litter box and pawing around/scratching the walls and mewing pathetically. This isn't SUPER uncommon for her but I'm worried being in there too much is going to lead to infection.

Any thoughts? Should I be worried about her lack of sleep, activity level, water drinking habits, or litter box habits?

Edit: I've considered putting her in the bathroom instead of my bedroom, but I haven't for a few reasons. First, she LOVES climbing the shower curtain liner (a recent habit of hers) and I'm afraid putting her in there would be even worse than in my bedroom, and second, I don't think her huge litterbox would fit in there.
