Does the diet difference really matter?

I have 5 cats. For awhile I was feeding them Rachael Ray dry and Fancy feast for wet. They’d split a can of FF 2x a day and free eat on the dry. Then, I wanted to try something healthier so I switched to Wellness Core, both dry and wet. One of my cats doesn’t like wet food and also didn’t like the WC wet so I just bought the tiny bags of RR and gave her some morning and night. Another one of my cats didn’t like the WC wet food as much so I kept using FF sparingly. My other three cats will really eat anything. All four of them, though, will sabotage (for lack of a better word) my one cat’s food who only eats RR. They LOVE that stuff. I know WC is healthier than RR, but I’m wondering what the difference really is, because if everyone is happy with RR and FF, what’s the point in me buying WC when it’s $20-$30 more expensive? I don’t want to harm my cat’s health though, and would prioritize it over my finances if need be. Any opinions are welcome. Thank you!
