My cat randomly attacks me

Me and my boyfriend live together with our 10 month old male shorthair, Loki. He is a rescue and is missing his front right leg. The shelter we rescued him from had no history on what had happened to him. About a month back I introduced him to my mother at her house. I let him roam the place and chill. I had her dogs separated in a separate room. My mum complained that the dogs were upset and that it would be a good idea if Loki were introduced to the dogs. He has never shown any aggression towards us before. No scratching, biting, or hissing. He was perfect. Me and my boyfriend were highly against this idea and expressed this to my mother, who kept being naive and insisted. The dogs immediately bolted towards Loki and at that moment Loki began attacking my boyfriend’s face like he was about to be murdered. My brother had to separate the dogs while I had to grab hold of my cat off of my boyfriend in which he began attacking me. I was able to set him into a safety box and spent the next 3 hours treating our wounds. All the while we were screaming, my mum sat on her chair smoking a cigarette. We haven’t been there since. I have never seen a cat react that aggressively. My poor Loki was traumatized and I felt sad for him. In two days he was back to his normal self. However, since then, Loki will randomly run up to me and bite me, drawing blood and leaving bruises. He will get this crazy look in his eyes with his ears pointed back and start to run and bite. My boyfriend feels bad that he is projecting his aggression towards me. I want my old kitty back. I’m scared of him now. What should I do?
