What to do when you can see a cat bite coming?

My little furry asshole kitty has a temper that we're not sure how to handle. She'll go from purring and happy to annoyed and biting pretty quickly. It's telegraphed in her behavior, so I'm not caught by surprise by the bite, but I can't figure out what to do when I can see it coming and have time to react. My instinct is to try to distract her, but often as not she'll come back from her distraction, glare at me, and bite my hand anyway.

It would also be nice if she could chill out and not get so angry in the first place. We're pretty careful not to overstimulate her during petting, it's more like she gets angry about something we do while petting her, maybe we letting a forearm get too close to her face or something, though it's usually not so obvious. She'll go into pissed off stance and then bite me 5 or 15 seconds later.

It makes it pretty hard to sit on our couch, unfortunately. She demands attention and love, but my wife especially is nervous to give it to her because she doesn't want to get bitten. She bites me less often so I tolerate it more, but we definitely don't want her around kids. The vet prescribed Amatryptaline to calm her down, but that doesn't seem to have worked particularly well.
