Cat alternates between being super cuddly and biting/attacking?

Hey guys! I had cats for many years when I was younger, but it's been a while, and I now have a new(ish) cat. He is about 2-3 years old and definitely isn't feral, but wasn't given much attention by humans in the past--he was fed and taken care of but mostly left to do his own thing. So I don't know if this is why his behavior is a bit weird (even for a cat).

He is REALLY sweet and affectionate, and now that he's a little bit familiar with me, he comes up to me to hug my legs and beg for pets. And he is super cuddly when he does this! But almost every time, he'll end the interaction by lunging at me and biting/scratching my hands. I can't figure out why--if it's something that I'm doing wrong, or if he's just getting used to me? I'm also not sure how to mend the behavior. So far I just kind of softly yell "no" and wag my finger at him, then walk away when he attacks me. I'm not really sure if that's effective or not though, lol.

I would greatly appreciate any advice from other cat owners! Thanks!
