Cat Adjustment!

I recently adopted an 8 month old Ginger Tabby (Ricky) Right before leaving to the Petco where his foster mom was to meet us he escaped his carrier and hid. She had to chase him down and pull out from under furniture where he had pooped, gotten dragged through it and then had to have a bath. So when she showed up she explained he had basically just been traumatized but didn’t cancel on us for him to calm down because we had driven 2 hours to get him. We then had to drive two hours home with him. He’s also never been away from his siblings. That was Saturday. He’s still scared of us during the day. He will let us pet him and relax a little but won’t approach us at all. He won’t eat/drink/ use his box during the day as well. Starting around 12 when my s/o and I are mostly asleep he’s suddenly alert and active, he’ll eat his food use his box and even jump in bed to climb on us and check us out. How would you recommend I get him to be more comfortable with us? We’ve been hanging out with him in shifts so he’s not too stressed and trying to engage him with toys but he just seems so freaked out?
