Seeking Advice - Cat Keeps Poo'ing Outside of the Litter Box in the House

Hello everyone, I'm eager to get some advice on how to progress forward with my cat. I'll try and keep this concise but with the most details as possible.

> Adopted a female cat from the local rescue center 2 months ago.

> Cat is normal, loving, healthy, etc and we bonded right from the moment I held her.

> Approximate age is "between 3-7 years of age, according to the shelter"

> Previous owner claims they worked a lot (couldn't give the cat much attention) but also mentioned that the cat "simply never managed to adjust to the living situation." This is background to how she ended up at the rescue center.

> Cat is in my house, gets feed a balanced diet of mostly wet food (can of Applaws a day, plus some healthy dry). Also a fresh clean water bowl in the house, which she uses when she wants. Cat loves her food and water, is not overweight, etc.

> Noticed that once or twice a week the cat shits on our carpet, under the coffee table or in my bedroom.

> I work from home so the litter box is ALWAYS clean, odorless, etc. Litter box is position in a quiet safe place. I use a hooded litter box with clumping odorless litter. When she uses the litter box she legit seems purrfectly fine with the litter and box itself.

> Cat has NO method to her bathroom ways. Sometimes she is a good girl and goes all week with potty outside. Sometimes, she makes potty only in the box. It's completely random. Some days, she poo's only outside, then somedays she pee's only in the box....

> She has a window she can go in and out of 90% of the time, right into our quiet safe back garden. So access to outside IS ALWAYS ENCOURAGED. She has on many occasion gone pee and poo outside without any issues.

> When she goes to the bathroom she never seems stressed or anything like that. Me and my husband cannot figure out why she has this behavior to shit in random places in the house when her box IS RIGHT THERE, CLEAN AND READY FOR HER.

Any help or advice on what I should do would be great. I've already emailed the shelter asking for help and info, so just waiting for them to reply.
