Play aggression in cats

Wondering if anyone else has dealt with this. Three years ago, I adopted a kitten. Love the little guy. However, I did make the mistake of allowing him to bite me during play time. Never hurt too much, but I did have to shoo him away from my arm often.

My girlfriend recently moved in with her own cat, another male about year younger. All things considered, they get along fairly well - no territory disagreements, share a litter box, nap near each other. But, when they play, my cat sometimes gets way too aggressive, lunging for the neck, straddling, and holding on with his teeth. The new cat hisses and runs away. Both cats end up with scratches on their bodies, and the newcomer stays under the bed now.

Google convinced me this is a result of my rough play. Any advice? Trying the water bottle approach, and only using toys to play with him now.
