unsure what to do about my cat

Hey guys, this is my first time posting so forgive me if my formatting seems weird.

6 months ago I adopted a cat that I loved named Daffy. I had been volunteering at the shelter I got her from for years, but mostly I chose her because she had been there for about 2 years, which is significantly longer than most of the other cats. She is in a special program at the shelter because she is a 'senior' cat (9 years old) and had been there for a really long time. Also, she has had some intestinal issues in the past resulting in surgeries. She had a 'fatty intestinal lining' and was on prescription science diet foot when I adopted her.

I have had cats all of my life, and they have always been normal. I think I treated her too much like a cat with no issues when I got her because I would let her eat human food sometimes. That would result in horrible vomit, at least once a day. I quickly stopped giving her food, but at the time my roommates were always home and would always leave their food out so there wasn't much I could do to stop her from getting ahold of that. She puked a lot. And then, she would eat my plants making even more puke. I threw away the plants and yelled at my roommates, less puke. She was relatively fine for a while, and then I found that she peed all over my new bedding. I got rid of it and used my old bedding again, no more pee.

Then, I dog-sat for my friends parents for 10 days. My roommates were home with my cat, cleaning her litter box and feeding her. they noticed there was no shit in the box, and then one day she ran into their room and shat on the floor. I later found that she was peeing and pooping on all of my shoes while I was gone (10 days). They were destroyed and I had no idea what to do. I threw away the shoes, and lost most of my trust in her.

That all happened about 3 months ago. this past month she has began liquid shitting under my bed (same general spot as where my shoes were) just about every day. I got her a (very large, very nice, VERY expensive) cat crate because I had no other options. She seems to like her cage, she goes in to it even when the doors are all open. I keep her in there while I am at work, and occasionally at night. I feel very bad that I have to keep her in one, though. If I did not, she would shit and puke all over my apartment. Lately she has began scraping her ass on the floor and only having liquid shits (sorry for how gross this is). The vet gave me some probiotics for her, and I have an appointment to see the vet today. They are suspecting that this is a parasite. I am very worried about her and I am afraid that I have been missing the signs all along, and that she will be really sick. This is my first cat that I am parenting myself, and I probably should not have picked a cat with chronic medical issues.

Has anyone ever been in this kind of situation before? I am desperate for any kind of advise, and I do not have the heart to get rid of her, because I do love her. My roommates are pissed and our apartment smells like ass.
