My cat bites me for no apparent reason. Advice?

I love my cat. But she's a huge asshole.

She's been with us for almost a year, and I took her due to it not working out at my parents place. Long story short, basically she's been on a strict diet because they let her get overweight. But she gets everything she needs otherwise. Playtime is hit or miss because she'll mostly get bored or annoyed by it. She constantly meows for food also, regardless of the fact that the food is on a timed feeder. Which is annoying, but I do my best to ignore that.

But in the last few months, she just attacks me out of nowhere when I'm home. It's such bipolar behavior, too. I'll be sitting on the couch, looking at my phone or whatever. I pet and talk to her occasionally, and she generally sits or lays in the area, sometimes on my lap, and will be purring, sleeping or chilling. Out of nowhere, she latches onto me and bites, haaaard! I shove her off the couch and spray her with water (I always keep the spray bottle close). She'll run off and will sulk for a while. Sometimes if the bites are really bad, I'll lock her in our spare room for a while (basically her room, it has all her things in it) and douse my arm with hydrogen peroxide.

And yes, I took her to the vet. He basically wanted to give her meds and/or medicated food to calm her with the stress of moving, but shrugged because medically, she's fine. I mentioned that I thought maybe she was pissed because of not getting food when she wants, and he scoffed and said he'd "never heard of a cat doing that."

I don't know what I can do to make her stop this. She has everything she needs, so wtf is wrong? She never does this with my fiance, also, just me. I'm tired of getting attacked and getting the resulting scars and scratches on my arms that people get horrified by. Any advice would be great. Also, I think I might be a dog person.
