Figuring out dog food allergies

Hi, I literally created a reddit so I can ask this. Please let me know if this is the wrong place to post this, or where I can look instead :)

My dog is 10 years old and has recently (as of March 2020) shown signs of a skin allergy. I only came home in July so that's why it wasn't noticed before. She had been scratching almost constantly and to the point of extreme hair loss (very upsetting to come home to after a year at school :( ). I took her to the vet a few weeks ago due to the lockdown in my city easing and the vet told me she was having an allergic reaction to her food. That's fine, except we've been feeding her the same food for over a year now, way before she started scratching. The food we give her is a mix of the Pedigree wet dog food (which she's been eating for several years now) and in the past year we've been making our own food for her too, which consists of:

sweet potatoes

squash

carrots

and minced meat (it was ground beef from April 2019-July 2020, and now we've switched to ground chicken and gizzards).

I'm worried that I won't have enough time to figure out the problem as I will have to leave for school again soon.

This has all been confusing as when she started scratching and when we've changed the food have not lined up (timeline attached).

My question is, how can I figure out what she is allergic too so that I can eliminate it from her diet without her having to suffer from itchiness much longer? Is it possible that she's allergic to the veggies or the wet food (does anyone know if Pedigree has changed their recipe or ingredients lately)? And if she is allergic to the meat, as the vet suggested, what can I use as a substitute that is still cost efficient as the quarantine has been a bit difficult for us financially.
