my rat attacked me completely out of the blue

about an hour or so ago, I was adding a new toy to my rats cage when the most friendly of the pair, Helena, climbed onto my hand and grappled my arm to try and climb up to sit on my shoulder (she isn't trained to do this, she just decided one day she was gonna be a shoulder rat and I was just thankful she saved me the treats I'd need to train her ahah). whenever she grabs onto my arm like this I always give her a little push with my hand to help her up. she's usually really grateful for this and gives me a little boop as she always does when she's thankful.

this time she didn't boop me, though. she grabbed hold of my ear with her grabbies and bit the bottom and didn't let go. she's never done anything even close to that. she's nipped me she she thought I was food but she's never latched onto me and not let go. it took about twenty seconds of me trying to grab her (she was buried under my hair) and her swatting me away and clawing at my hand before I managed to detach her. there was lots of blood. it's been bleeding on and off since it happened.

I've no idea why she would do this? If you'd told me yesterday that Helena did this, and not my other rat, I would've laughed in your face. she's the most friendly, caring animal I've ever met. it doesn't make any sense as to why she'd do this.
