Questions to ask when adopting a dog to make sure we'll be a good pair?

Hey everyone, I was just looking for some good questions to ask when adopting a dog from my local shelter. I went through the post about getting a pet on impulse but in my case I've kept his adoption pictures open in my browser tabs for a week while I considered it and decided that I'd like to go for a meet and greet.

My concerns:

-My roommate has a cat, she dog sits frequently so she's comfortable with the idea of a dog but obviously the cat we already own's well being comes first.

-Schedule, roughly three times a week I work long hours but am off the other four days, they've described him as being good at home but I want to make sure 9-10 hours roughly 3 times a week is fair to the dog. (This schedule worked with my older dog but he was very docile)

-Socialization, he's in training and seems to be doing well but I'm unsure at what point I should introduce him to my friends dogs/take him to parks/to dog friendly lunches/etc.

I'm pretty set on this dog, I just want to make sure my concerns aren't dealbreakers for him in particular. I've set aside ~9 days from work this month to make sure he gets well settled in. Are there any questions I can ask during the meet and greet to get a better feel for how a dog acts at home? He's a 5y/o German Shepard if that helps.

I've owned large dogs before so I'm familiar with the walking/feeding/restroom/veterinary/grooming requirements. I just want to make sure he's a good fit for the home and vice versa.
