What is this cat behavior? First-time cat parent :c

Hi y'all! So I adopted a 6 month old short-haired black female cat 2 weeks ago (July 5, 2019 - July 24, 2019). She was a stray until she got to the shelter. She had a typical settling-in period - started off in my room until she wanted to go out and explore. She's chilled-out, gentle, and doesn't scratch or bite at all despite how much I annoy her lol. She's super human-friendly and loves to be pet. She had a shelter cold (checked it out at the vet, who said it's not an infection and should go away with some TLC). I live with a roommate and we live in a two- bedroom apartment with a large living room/kitchen area.

My roommate also adopted a cat since we were both planning on adopting kitties. Her cat is an 8 month old calico who had had a litter before. She has some health issues because of this, but otherwise is a very energetic, very friendly cat. RM's cat is confident and social, and explored our entire place the first day she got home. She came home a few a days after my cat. My RM and I have the same set-up of separate litter boxes and food/water bowls in our rooms.

RM's cat was curious about mine, but I think my cat wasn't feeling well enough to really care. RM's cat hissed at my cat once she started exploring, but a day or two later, they were both lounging and napping together. My cat never reacted to the hissing, and RM's cat stopped hissing anyway. RM's cat brushed against mine and attempted to groom her, but my cat avoided it. We thought the girls were cool with each other.

RM and I leave to do our 9 to 5 jobs, so the ladies are home alone for those hours. We don't know how they are when we're not around. My cat is getting healthier and doesn't have eye discharge or snot anymore. My cat suddenly has been hissing at RM's cat and doing that scary deep low yowling at her every time she comes near my cat. My cat has holed up in my room. RM's cat seems to want to play or lay near my cat like they used to and she doesn't react or do anything back. RM's cat likes to come in my room to use the scratch lounge I have and to eat my cat's food. I don't want her to eat from my cat's food for territory reasons, but I don't want to keep my cat locked in my room while I'm gone. RM's cat tries to use my cat's litter box too, and I don't let her when I see her do it. My cat had been caught using my RM's cat's litter box and she also ate from the other cat's food too.

Yesterday, I came home to cat pee and poop on my bed. My cat was sitting on top as if she'd just done it. She had also pooped in her box. I was super super super mad after coming home late after a long day. I put her, her food and water, and her box outside of my room while I tried to clean up my mattress and comforter (threw out my fitted). I left her out of my room that night. In the morning, she had pooped by our shoes.

I'm taking my cat to the vet to figure this out, but I want your guys' input and insight on what y'all think is going on and what I can do. Thank you so much!!!
