Advice about young male cat

Hi all - I have a young male cat, about 9 months old, neutered, who my girlfriend and I adopted about 7 months ago. He was separated from his mother quite early, and so had to be taught lots of cat behaviours by us. (We joke that he doesn't know how to be a cat on account of him laying on his back like a human). He has such a lovely temperament, is super friendly, follows you around, is lappy, loves to be cuddled, etc. He is the perfect cat.

However, he does do this weird thing where he will be cuddly, sat on your lap enjoying scratches and then enter what my girlfriend and I will call "rage mode" - his eyes go wide, and his pupils dilate and he'll latch on to your aim and bite and scratch. To show him that this is wrong I will put him straight down on the floor and walk away. Occasionally he'll attempt to attack me again, either by jumping up at me or my legs/feet. I will usually then gently push him away and leave him, to which he always sulks and exhales a big puff of air, like he's cross. Then he'll calm down and usually go to sleep. Why does he do this? Does he want to play/wrestle like cats do with each other? He hasn't had much exposure to other cats apart from with his litter, and he was always the one to sit out of the play-fighting. I sometimes see him with a neighgbour's cat, and they seem to be friends, however.

It's also worth mentioning that he really only does this behaviour with me - he very rarely attacks my girlfriend, although she tends to be less hands on with him - i.e. less active in petting, cuddling.
