Behavioral issues with 4 year old doggo

Hello! Just as the title says, I’m having issues with controlling my 4 year old Border Collie/Australian Shepherd mix. As you can expect, he’s very high energy, but his excitability is causing problems. Leash pulling and barking around other dogs is a big one. And lately when we go to the dog park, as soon as he enters the gate he immediately gets into a snarling vicious fight with the first dog that greets him, and then he’s fine after a minute. Maybe this is a social issue. A new issue is that he barks and snarls at cashiers when I bring him with me to the drive thru. He never used to do that. It’s rude and embarrassing. He’s otherwise a very well behaved dog. At home he’s attentive and polite and follows commands. It just all goes out the window when he’s so excited about being out and about. Normally being excited is fine but it’s to the point that he’s gotten rude.

Other smaller issues I have with him is him getting into food or trash that’s left out when we leave. He will ALWAYS take the opportunity. He also pees in sneaky areas even if I make sure he pees before leaving. He never does that when we’re home and always knows when he’s in trouble for it.

I understand that this may be an owner issue, but I don’t know how to begin to approach this. I don’t know how to get him to listen to me when he’s overly excited.
