Staring Dog?

About a week and a half ago, I adopted a dog from a family friend who fosters dogs with a reputable rescue organization in the southeast. She has been the perfect fit for me and my lifestyle and everything has been going extremely well since I brought her into my home.

Fast forward to today and I'm starting to notice something funny about her. I don't believe it is anything health related, as she had an exam just prior to the adoption, but it's something I cant seem to figure out with her. Every now and then she'll just sit there and stare at me for no apparent reason. It seems to be at random moments of the day as well (no schedule of it) and I can't seem to pinpoint whats going on.

Obviously my main concern is that she needs something I'm not giving her, which has prompted me to write this post. Just this morning, when we came back from a long walk and some play time at the doggy park, she sat there for thirty minutes just starting at me while I did some work. She had just finished her breakfast, with water, and then posted up about five feet away from me just...staring.

Has anyone else had a similar situation to this? After a while she'll go lay down and at this point she surely has gotten accustomed to who I am and our schedule. Shes about two years old and a mix of a number of different breeds. She's very calm and very demanding for attention LOL. Again, my main concern is that something is wrong and I'm hoping someone can calm my nerves!
