Cat behavior advice

My 4 year old Diego has become a nuisance the past few months and I'm at a total loss of what to do. I love him to death, but his eating schedule is so bonkers that it's causing a loss of sleep. I would normally feed him in the morning at about 6 when I wake up, between 2 and 3 PM and at bedtime between 10 and 11 PM. For the past year or so he has been whining and mewing at 3 AM begging for food. And the longer he doesn't get it the louder and more persistent he becomes. Eventually I need to give in for mine and my wife's sake of sleep and just feed him.

I have tried with all my might to force him to wait it out but there's only so much you can do when it's 3 in the morning and you just want to sleep (in fact I'm writing this post at 430 AM because I just fed him an hour ago).

He's already a hefty boy weighing in at 17 pounds (he's also tall, vet recommends he should be around 15) and I worry about feeding him more food. I've tried to reportion his food and give him slightly less during the breakfast and lunch and more at night but it didn't seem to work. I've tried to look elsewhere online and seen that giving him food with higher calorie count may work, but again the last thing I'm trying to do is give him more calories since he's already big.
