How long is it normal for a cat in a new environment to not eat or drink? When should I seek medical help?

We TNRed a very shy stray cat a while ago because at the time she was obviously not comfortable being inside. Since then she's become very friendly to me and our kittens and has been coming inside briefly, obviously nervous but curious. Last night I closed the door. It's safer in here than out there, and we're confident she's at a point where she'll be able to adjust to inside.

She's not thrilled with the situation but seems ok, like she doesn't look particularly nervous most of the time. She's been exploring cautiously. She meowed to leave a few times but it's not constant. She made friends with our cats almost immediately and with no issues. She approaches me for pats. She often follows us when we call her. She has slept. She's used her litter tray. But she hasn't eaten once, and as far as I've seen she hasn't had any water. I've shown her to her food and she's sniffed it on her own, and I've also offered to hand feed her, she just doesn't seem interested.

It's been 20 hours. At what point should we start to be concerned and go to a vet?
